PB Surprise Banana Oat Muffins

PB Surprise Banana Oat Muffins

OBJ: TCW be able to use up some of her ripe bananas and pantry items all while creating a beautifully scented home by making these muffins!

Ingredients:
1 ¼ C flour
¾ C sugar
1 tsp baking powder
1 tsp salt
½ tsp baking soda
½ tsp cinnamon
½ tsp nutmeg
1 ½ C old fashioned oats
2 eggs
½ C vegetable oil
½ C sour cream
3 ripe bananas, mashed
¾ C creamy peanut butter

Procedures:
1. Preheat oven to 350 degrees and line a 12 cup cupcake pan with paper liners or spray with nonstick spray
2. Mix the flour, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg in a large bowl
3. In a larger bowl, whisk eggs, vegetable oil, and sour cream
4. Stir in bananas
5. Fold in dry ingredients until just combined
6. On the bottom of each cupcake liner, spoon 1 tsp peanut butter
7. Spoon batter over peanut butter and fill each cupcake ¾ full
8. Sprinkle  a heaping 1 TBS oats on top of each cupcake and gently stir in with a butter knife
7. Bake for 23-25 minutes, or until toothpick inserted in center comes out clean
8. Remove pan to rack and let cool for 15 minutes, and then take out of pan let cool completely

*** Step 8, adding the oats at the very end was actually a mistake on my part when making but it turned out really well. Originally, I was supposed to add the oats to the dry ingredient bowl. That would have made this process easier but mixing in the oats at the end was sort of fun and made for a more “rustic” looking muffin! You can either do it my way or the, I guess, right way. Haha ***
